Job Description: As the Head Chef on the cold station, you will be responsible for overseeing the preparation and presentation of cold dishes in our kitchen. Your primary focus will be on creating appetizers, salads, cold soups, and desserts, ensuring they meet the highest standards of quality, taste, and presentation. Collaboration with other kitchen staff, including sous chefs and line cooks, will be essential to maintain consistency and efficiency in food production. Additionally, you will be tasked with:
- Developing and updating menus for the cold station, incorporating seasonal ingredients and culinary trends.
- Supervising kitchen staff, including training, scheduling, and performance management.
- Ensuring compliance with food safety and sanitation standards, as well as health and safety regulations.
- Monitoring inventory levels and ordering supplies for the cold station.
- Maintaining a clean and organized work environment, including equipment upkeep and sanitation.
- Adhering to budgetary constraints and cost control measures without compromising food quality.
- Collaborating with the executive chef and other kitchen leaders to achieve culinary excellence and guest satisfaction.
Requirements:
- Proven experience as a Chef de Partie or Sous Chef, with a focus on cold station operations.
- Strong culinary skills and a creative flair for developing innovative cold dishes.
- Excellent leadership abilities, with the capacity to motivate and inspire kitchen staff.
- Thorough knowledge of food safety standards and kitchen best practices.
- Effective communication and interpersonal skills, with the ability to collaborate effectively with team members.
- Attention to detail and a commitment to maintaining high standards of quality and consistency.
- Flexibility to work in a fast-paced environment and adapt to changing priorities.
- Culinary degree or relevant certification is preferred but not required.
